Bruschetta with Tomato and Basil


The Bruschetta with fresh tomatoes and basil are a classic Italian appetizer with the intensive flavours of summer and Italian extra virgin olive oil. 

You will see that it couldn't be easier to prepare and it is perfect for a buffet!

Ingredients for 4 persons:

one baguette or Italian ciabatta
2 tomatoes
1 clove garlic minced
½ chopped onion
salt & pepper
extra virgin olive oil
some lemon juice
fresh chopped basil
 

Preparation time:

Prep: 10 min  
Rest: 30 min  
Total time: 40 min

 

Directions:

Wash the tomatoes, chop them into pieces and put them in a bowl. Add the minced garlic, extra virgin olive oil, minced onion, fresh chopped basil, some drops of fresh lemon juice, salt & pepper. Toss all the ingredients and let them rest for minimum 30 minutes. 

Meanwhile cut the bread into thick slices and drizzle them with olive oil. Cut a clove of garlic in half and rub over both sides of the bread slices.

Preheat a frying pan over medium high heat. Place the toasts in the pan and cook, until golden. Flip over and continue cooking until golden on the other side. 

Place the bread on a nice serving plate. Use a spoon to gently top each toasted bread slice with some of the tomato mixture.
